This refreshing fermented pineapple drink is perfect for warm days and supports your gut with natural probiotics. Here’s how I make it—no piloncillo this time (cause im staying away from sugar), just honey and agave.



Tepache Recipe:

Ingredients:
• Peels from 1 ripe pineapple (well washed)
• Pineapple core (optional, or a few chunks of fruit for more sweetness)
• 4–6 cups filtered water (enough to cover the solids)
• 3–4 tablespoons raw honey
• 1–2 tablespoons agave syrup
• 1 cinnamon stick
• 2–3 whole cloves
• 1 star anise
• Optional: pinch of salt (some people like this for balance)

Instructions:
1. Wash your pineapple thoroughly using a produce brush.
2. Place the peels (and core or fruit, if using) into a large clean glass jar.
3. Add the honey, agave, and spices.
4. Pour in filtered water to cover the ingredients, leaving about 2 inches of space at the top.
5. Stir well, then cover with a clean cloth secured with a rubber band.
6. Leave at room temperature for 2–3 days.
7. Check daily—when it smells sweet, tangy, and just a little fizzy, it’s ready.
8. Remove any foam on top, then strain and transfer to a clean bottle or jar.
9. Store in the fridge to stop fermentation and keep it fresh.
10. Serve cold, over ice. Enjoy!
